We’re looking for a Head Brewer to lead brewing and liquid production at our Brisbane brewery. This is a hands-on leadership role for someone who combines deep brewing knowledge with strong people leadership, commercial thinking and a relentless focus on quality.

You’ll own the journey from recipe and raw materials through brewing, fermentation, maturation and release, ensuring every product is safe, consistent, efficient and something the team is proud to put its name to. You’ll also help expand what the site can deliver across BrewDog beers, alcohol-free products, RTDs, customer brands and new beverage innovation.

About The Role

What you’ll own

Lead the brewing team day to day: set clear priorities, plan shifts, coach and develop people, and build a safe, accountable and collaborative culture

Own brewing and liquid-production performance from raw materials through fermentation, maturation, filtration, carbonation and product release

Deliver the production plan safely, on time and to specification, working closely with Supply Chain, Packaging, Quality, Sales and Marketing.

Set and improve brewing standards, recipes, SOPs, process controls and production records across beer, alcohol-free beer, RTDs and other beverages

Lead liquid quality, sensory performance, yeast health, microbiology and continuous improvement, supporting the site’s HACCP and GFSI programme

Own brewing yields, losses, raw-material usage and liquid COGs; identify practical improvements that strengthen quality and profitability.

Lead production input into NPD, trials and scale-up, turning ideas into products that can be made consistently and commercially

Partner with Engineering and Packaging on plant reliability, maintenance priorities, capacity planning and future brewery investment.

Build strong relationships with suppliers, technical partners, regulators and BrewDog/Tilray colleagues around the world


 

About You

What you’ll bring

Significant production-brewing experience, including leadership responsibility in a commercial brewery or comparable beverage-manufacturing environment

A relevant brewing, science or engineering qualification, or equivalent practical expertise developed through your career

Strong technical knowledge across brewing, fermentation, yeast management, filtration, carbonation, CIP, sensory and product quality

Experience leading, coaching and developing a production team, with the confidence to set standards and hold people accountable fairly

Experience with production planning, quality systems, supplier management, KPI reporting and cost control

A practical, hands-on approach: you’re comfortable solving problems on the brewery floor as well as planning, analysing and communicating

A commercial mindset and the ability to work cross-functionally, balancing product ambition with safety, quality, capacity, service and cost

Curiosity about beer and beverages beyond beer, with an appetite to keep learning and improving

Practical details

This is a full-time, brewery-based role in Murarrie, Brisbane.

The role requires flexibility around brewery operations, including occasional early starts, late finishes or weekend support when production demands it.
